The Harvest

My floor is sticky, my oven top is black and I've been working like a pioneer, but it's all worth it...right?

Just wanted to share my favorite canning recipes. I'm certainly no expert, but I use my husband's taste buds as a guide and he is in LOVE with his mother's salsa and the other recipes below. He used to come home from high school football everyday and eat chips and a jar of salsa by himself. It is really good and I thought I'd share the love.

Ruthie's Salsa

14 c. chopped tomatoes (she takes the skins off, I don't)
4 jalapenos
1 med-large onion
1/3 c. sugar
1/3 c. salt
3/4 c. vinegar

Mix everything in a big pot. Cook for 3 hours. (I made a batch I only cooked for 1.5 hours and it was still great). Pour into jars & process in water bath for 45 minutes.

I also came across a recipe for peach syrup a few years back and gave it away for neighbor gifts at Christmas and can I just say that I had a bizillion phone calls that year wanting that recipe...I got it off recipezaar.com so I can't take credit for it, but it is really good!


Vanilla Peach Syrup (makes about 3 pints)

5 c. peaches, pureed
2 c. sugar
2 Tbsp. lemon juice
2 t. vanilla

Combine puree, sugar and lemon juice. Bring to boil & then simmer 5 minutes. Add vanilla. Pour into jars, process for 25 minutes. (It's great on ice cream, waffles, pancakes, etc.)

Also, my good friend Tausha just shared her peach pie filling recipe with me and I was literally spooning it out of the bowl and eating it. It rocks!

Peach Pie Filling (makes about 6-7 qts.)
16 cups of sliced peaches
12 Tbsp. cornstarch
4 Tbsp. lemon juice
Add cinnamon to taste

Cook everything on medium until the sugar is dissolved. Pour into jars and process for 30 minutes.
A few canning discoveries:
-I ran out of lids today with 2 more quarts to go. I got two used lids from past canning, washed them and used them again...they sealed just great! I have always heard that you can use them more than once, but I didn't want to take any chances.
-When canning peaches, instead of making a messy syrup with sugar & water mixed, I just put a tiny bit of water in the bottom of the jars, add about 2-3 Tbsp. of sugar per jar and then add my peaches and top off with warm water...it works great!
-When I slice peaches, I just de-skin them and then go around the peach and cut it into slices with the pit still inside. Then I just loosen the slices a bit and they fall right off leaving the pit...it's so easy!
You probably have tried all these numerous times and I'm just a little slow in figuring it out...it wouldn't be the first time!

you go girl! Thanks for the props. Now I am just waiting for the pie for me! You know, a thank you present for all of my vast knowledge. I would even take a slice-with ice cream-of course!
Since your all pioneery and stuff-I figure that you will want to make a pie again-you know to hone your skills! Again, just being a good friend!
